There are many different kinds of mole, including yellow mole, red mole, black mole, green mole, and mole poblano, many of which are made from recipes passed down through generations. At Sazón in the heart of Santa Fe, New Mexico, Chef Fernando Olea serves up some of the best mole dishes in New Mexico.
Chef Fernando Flea came to Santa Fe from Mexico City more than 30 years ago with some of the best mole recipes we have ever had. With more than 30 ingredients, including toasted and ground spices, seeds, chiles and nuts, these deep flavors really make a dish.

Once you decide which mole is your favorite, you can order it with your main entree! Some of our favorite dishes are the Shrimp Enchiladas with zucchini blossoms, and the Cholula, a tower of poblano chile peppers with ground lamb, pork, beef, and much more.

These moles really complete the dish. Each variety has a different flavor but all of them are deep and flavorful. If you can’t decide which one was your favorite, you can also decide what to eat and then ask your waiter to recommend the best mole to pair with that dish.
