Maryland’s famous Smith Island got its beginnings on Smith Island. In the 1800s, cake was sent with the local watermen for the autumn oyster harvest.

The cake was made with fudge instead of buttercream because fudge cakes lasted longer than other varieties. This would ensure that the watermen could enjoy this treat for days at a time.
