Their menu might have a few items, but we wouldn’t call it limited. We would refer to it as focused. The focus here is on doing a few things really well, like potatoes and sandwiches.

Rubicon’s smoked baked potatoes are the most popular menu item. You have your choice of meat (smoked brisket, hotlinks, or chicken), and each potato is also covered with butter, cheese, and barbecue sauce, which turns these potatoes into a MEAL.

The potatoes here are easily some of the biggest we have ever seen. They are also some of the tastiest because of all the delicious toppings on them.

The smoked brisket sandwich really needs no introduction. It tastes as good as it looks.

We are so fortunate to have a variety of incredible restaurants to choose from in the Sooner State. And while I do love some of the big chain restaurants, it’s hard to beat the food found in small-town Oklahoma. If you enjoy discovering hidden dining gems as much as I do, check out Jincy’s Kitchen in Park Hill. It’s hard to beat their comfort food and friendly hospitality.
